Dark Chocolate Cake with Caramelised Kumquats


Ingredients :
3/4 Cup Whole wheat flour
3/4 Cup Flour
1tsp Baking powder 
3/4 tsp Salt
1/2 tsp Baking Soda
3/4 cup Canola Oil


1 1/4 Cup Brown Sugar 
1 tsp Vanilla Essence
2 Eggs
1/2 cup Buttermilk



1/4 Cup Cocoa powder
1/2 Cup Hot Coffee
20 -25 Kumquats  (thinly sliced)
1/2 Cup Water
1/2 cup Sugar
100 gms Chocolate chip
1/2 cup Cream



Directions:
1: Preheat oven at 180 degree Celsius. 
2: Grease an 8" round spring form pan.
3: Sift both flours, baking powder , salt and baking powder in a bowl.
4: Boil water and make strong coffee.



5: Add cocoa powder and stir.
6: Add oil and sugar in a bowl and mix properly. 


7: Add egg one by one along with flour mixture  and vanilla essence in oil mixture with an electric mixer at low speed.


8: Add curd and buttermilk and mix again.



9: Pour in the spring bottom pan and bake it 30-40 minutes at 180 degree Celsius. 



10: Place sugar and water in a saucepan and stir to combine.



11: Add kumquats and cook till they are translucent. 
12: Strain and cool.



13: Let the cake remain in the oven after its baked so that it cools down.
14: Meanwhile pour warm cream over chocochips and give it and nice stir.
15: Let it cool down and pour over the cake.
16: Decorate with candied kumquats.
