Street Food Of Delhi


               Delhi- A Street food hub

      Offering a rich diversity of cuisines, Delhi is also called 'Street Food Hub' and Chandni Chowk is undoubtedly the 'Street Food Capital Of India'.

               Delhites love street food or so called 'chaat'.
        Taking back to black and white era stands Chandni Chowk with its shops serving much colorful and highly aromatic food ranging from famous Paranthewali Gali's paranthas, Old and Famous Jalebiwala's mouth watering jalebis, Moti mahal's butter chicken, Natraj ke dahi bhalle, Kuremal Mohanlal kulfi wala's kulfi and Chainaram halwai's Karachi halwa.
               If you didn't dig into these extraordinary gastronomical delights earlier; remember, YOLO!!!!

Chilli Fish

   
                This Indo-Chinese creation is a much sought after starter. Widely popular with both kids and adults, it can easily make your evening special. It tends to work excellently as a side dish, an appetizer in itself or can be served with steamed rice.
                            So why wait.....get , set n gooo!!!!

Ingredients:

250 Gms. Boneless fish fillet( 2"_3" broad)
1/2 cup cornflour
1/2 cup flour
Salt , as per taste
1/2 tsp. Black pepper powder
1/2 Capsicum(cut into cubes)
1/2 Red pepper(cut into cubes)
1/2 Yellow pepper(cut into cubes)
Oil for frying

For the sauce:

1/2 tsp.  Garlic(chopped)
1/2 tsp. Ginger( chopped)
1 tsp. Green chillies(chopped)
4 tbsp. Tomato ketchup
2 tsp. Light soya sauce
2tsp. Vinegar
2 tsp. Chilli sauce
1 tbsp. Cornstarch
Oil

Instructions:

1.Make a thick batter of flour , cornflour, salt and pepper.
2. Add fish to it.
3. Deep fry till it is golden brown in color.
4:In a pan, heat oil .Add chopped ginger, garlic and green chillies. Stir it a little.
5:Add tomato ketchup,Soya sauce, Vinegar and Chilli sauce.
6:Stir it for 2 to 3 minutes and add cubed peppers .Again, stir it for 2 minutes.
7:Add cornstarch and stir.
8:Add fish and stir well so that it is evenly coated.
9:Serve!!

Hummus


                         Need a dip , a spread or an extremely yummy and nutritious blend of super foods???
           A creamy dip, hailing from Middle East can be made at home without any hassle. Take your tastebuds for a roller coaster ride by adding different chillies or flavors. Give it whatever twist you want to and enjoy it with pita , shish touk or falafel.

Ingredients:

2 cups Boiled and drained chickpeas
4 tbsp. Tahini
3 tbsp. Olive oil
1/2 tsp. Salt
2 cloves garlic
2 tsp. Lemon juice
A pinch of Paprika

Directions:

1: Put everything in a food processor except        paprika.
2: Blend it adding chickpeas' reserve  slowly.
3: Put it in a bowl; drizzle olive oil over it n         sprinkle paprika over it.

                 Shish Touk With Hummus

Shish touk, Shwarma, Fattoush, Kibbeh- does it ring a bell ???

Yes, it does. Your date with Lebanese food; drool-worthy, nutritious , and YUMMILICIOUS !!!!!
Focus of Lebanese food is always on fresh ingredients, spices and herbs like mint , parsley , garlic , nutmeg and cinnamon...to name a few . So taking out a few leaves from the Lebanese cuisine .....here I am , with most loved dish of Lebanon....Shish Touk.

                             Ingredients:

750 Gms. Boneless chicken breast(cut into                         kebab chunks)
200 Gms Yoghurt
2 tsp lemon juice
1 tsp garlic paste
1 tsp ginger paste
3 tbsp olive oil
3/4 tsp salt
1/2 tsp red chilli powder
1/2 tsp paprika
3 tbsp tomato ketchup
1 tsp baharat

                          INSTRUCTIONS:

1: Wash chicken.
2:Whisk all the ingredients in a bowl and add    chicken to it.
3:Cover and refrigerate for at least 4 hours.
4:Skewer them and grill.
5:Sprinkle chopped parsley and serve with        hummus and pickled vegetables.

Grilled Chicken With Orange Jus


The smokey flavor; bright colored stripes and the succulence -add flair to the chicken. Citrus fruits work their way into increasing the 'Zing Quotient'. Be it any style, the result is irresistible.
                         Ingredients:
(Serves 2)

1/2 kg. Chicken breast(boneless)

1/2 cup fresh orange juice
3/4 tsp. Salt
1/4 tsp. Black pepper
1/4 tsp. Paprika
2 tsp. Lemon juice
1/2 tsp. Chilli sauce (Sriracha)
1/2 tsp. Ginger paste
1/2 tsp. Garlic paste
1/4 cup Red wine
1/2 tsp. Orange marmalade
Blood orange slices

                          Directions:


1:Wash chicken breast.

2:Add all the ingredients  in a bowl.
3: Marinate chicken for 4-5 hours.
4: Take out chicken breast and orange slices from the marinade and grill them.
5:In a separate pan, heat the marinade and thicken it.
6: Pour it over grilled chicken and serve with sauteed vegetables.

* Jus is the light sauce made to enhance the flavor of chicken or meat.

RED WINE SANGRIA

RED WINE SANGRIA!!!
A popular Spanish drink with irrestible mix in-as per your choice;sans imagination limit.While Spain is heralded as the creator of sangria,countries all over the globe have tried their hands on the recipe-with several twists
MIX THE INGREDIENTS, CHILL AND VOILĂ€!!!

INGREDIENTS
1 bottle red wine (merlot)            
1/2cup brandy or 2 cups white rum
1/4 cups triple sec 
1/4 cup orange juice
1/4 cup simple syrup (made with equal amount of sugar and water )
3tbsp lemon juice
Few mint leaves
Strawberry slices
Apple slices
1 cup club soda or 1 club ginger ale

DIRECTIONS
Mix all the ingredients  except soda / ginger ale. Let it stand in an airtight container or pitcher  for atleast 24 hours in refrigerator.Before serving add soda or ginger ale .

Choco Lava n Brownies Platter


Ingredients:
240 gms. Semi sweet chocolate
1 cup unsalted butter
4 eggs
4egg yolks
1/2 cup sugar
1/4 cup salt
1/2 cup refined flour
3/4 cup heavy cream (whipped)
8 ramekins
Butter for lining ramekins

Directions:
1: In a small saucepan, melt chocolate over
Double boiler.
2: In a mixing bowl, combine 4 eggs, egg yolks, sugar and salt beating it at a high speed for around 5 minutes.
3: Stir in cooled chocolate -butter mixture . Sift flour over batter and fold in it to blend.
4: Spoon batter in ramekins(lined with butter)
5: Place in preheated oven at 400°F for 8-10 minutes.
5: Remove from oven. Let it cool down
 for 5 minutes.
6: Loosen edges with sharp knife and invert it into dessert platter.
7: Serve with vanilla icecream,brownies and chocolate sauce drizzled over it.

BROWNIES:

Ingredients:
2 cups refined flour
4 cups castor sugar
1 cup butter
8 eggs
1 cup cocoa powder
2 1/2 cups chopped walnuts
1/2 cup baking powder
1/2 tsp. Salt
2 tsp. Vanilla essence

Directions:
1: Sift flour, baking powder and cocoa powder.
2: In a bowl,mix butter,vanilla essence and sugar until creamed.
3: Add salt.Now gradually mix in eggs one by one.Add in the flour and fold well to form a smooth mix.
4: Add 3/4 walnuts and mix well.
5: Grease a baking pan and pour the mix.
6: Sprinkle walnuts on top .
7: Bake in moderate oven for 30-40 minutes or till done.

Crispy Fried Chicken Strips


 Ingredients:
 (Serves 4-5)
1/2 kg chicken breast(boneless)
3 tbsp. Tomato ketchup
1/2 tsp. Chilli sauce
1/2 tsp. Extra hot chilli sauce(I used Nando's)
1/2 tsp. Salt
1/4 tsp. Red chilli powder
1/4 tsp. Black pepper powder
1/4 tsp. Paprika
1 tbsp. Olive oil
1 tbsp. Vinegar
1/2 tsp. Ginger paste
1/2 tsp. Garlic paste
4tbsp. Refined flour
1 cup crushed cornflour
Oil for frying

Instructions:
1:Wash and clean chicken .
2:Cut it into 1" broad strips
3: In a bowl, mix all the ingredients except chicken, flour and cornflakes.
4:Marinate it for 2-3 hours.
5:Crush cornflakes.
6:Add flour and season it according to taste.
7:Roll chicken strips in it and deep fry.
8: Serve with chipotle dip.
9: Enjoy !!!!

Tandoori Chicken Satay




Ingredients:
500 gms. chicken breast(boneless)
150 gms. curd
1/2 tsp. red chilli pd.
1/2 tsp salt
1/4 tsp black salt
1 tsp. ginger paste
1 tsp garlic paste
1/4 tsp. garam masala
1/4 tsp degi mirch
1 tsp. lemon juice
2 tsp. mustard oil
1 tsp. kasoori methi
1 tsp. carom seeds(ajwain)
Chopped coriander for garnishing
and a few bamboo satay sticks

Method:


1. Wash and clean chicken breast. Cut it into strips(1" broad)

2. In a bowl, mix all the ingredients except coriander and satay sticks.Marinate for atleast 4 to 6 hours.
3. Soak satay sticks in water.
4.Skewer chicken strips into satay sticks.
5.Grill on a grilling pan.Garnish with chopped coriander leaves and serve with mint sauce
