Grilled Cottage Cheese Steak With Stir Fried Veggies


Ingredients:
250 gms. Cottage Cheese 
1 tsp. Oil
1/4 tsp. Salt
Pinch of Black Pepper Powder
1/4 tsp. Garlic paste

For veggies:
1 tbsp. Olive Oil
1 tsp. Garlic paste
10-15 Baby corn(cut lengthwise)
2 Carrots(cut diagonally)
250 gms. French beans(cut into 1"-2" long strips)
1 Capsicum(diced)
1 Red pepper(diced)
1 Yellow Pepper(diced)
1/4 tsp Salt
1/4 tsp Black pepper powder
1/4 tsp. Light Soy Sauce
1/4 tsp. Oregano

Directions:
1:Cut cottage cheese into round shape.
2:Marinate it in a mix of oil ,garlic paste, salt and black pepper powder.
3:Keep it for 10 -15 minutes.
4.Heat oil in a wok.
5:Add parboiled veggies.
6:Stir fry them and add garlic paste.
7:Add salt,pepper,soy and oregano and stir it  for 2-3 minutes on high flame.
8:Grill cottage cheese and serve with stir fried vegetables.

Honey glazed grilled chicken

   
               Tender and juicy grilled chicken breast can leave anyone craving for more.  A simple technique of grilling can help you lock in the juices of all the meat. Quite a lot of people find this simple technique, to hold on to its juices ; so complex that they are confounded by it. 
                                                       But whether you use basting with marinade as a softening technique or grilling it under a brick or on a bbq grill- the result is moist, flavourful and succulent chicken. 

Ingredients:
2 chicken breast(boneless)
6-8 basil leaves(chopped)
1/4 tsp. thyme leaves
1 sprig rosemary
1/4 tsp. black pepper(fresh ground)
1/2 tsp. salt
1/2 tsp. garlic paste
1/2 tsp. ginger paste
 2 tbsp. olive oil
1 tbsp. honey
1/4 cup white wine

Directions:
1: Whisk all the ingredients of marinade and add chicken to it.
2:Marinate for atleast 2-3 hours and grill.
3.serve with sauteed vegetables or potato corn salad.

Garlic Chicken Tikka

Chicken tikka,as we all know means chunks of chicken marinated in spices and char-grilled.It is quite a popular dish which has been modified since ages to suit one's taste.
Garlic chicken tikka is one such variation.
          This tikka is so popular that even foreigners don't mind indulging into this gastronomical delight despite being spicy.
But who can ignore this dish which is so comforting and soothing to your sensory system.
  Spices and garlic make an awesome combination. Baking in tandoor enhances its flavor and imparts heavenly aroma. So indulge into this regal existence now.

Ingredients:
(Serves 4)
4 chicken breast ( boneless- cut into tikkas)
200 gms. Yogurt
1 tsp. Salt
1/2 tsp. Red chilli powder
1/2 tsp. Kashmiri Mirch
10 cloves garlic(crushed)
3/4 tsp. Ginger paste
3/4 Garam masala powder
1 lemon's juice

Directions:
1:In a bowl, whisk yogurt along with all the ingredients except chicken.
2: Add chicken pieces and marinate for at least 4-5 hours.
3:Put it on skewers and bake it in hot tandoor or grill it in a pre heated oven at 180° C., often basting in between with butter.
4: Bake or grill till it is slightly brown .
5: Squeeze lemon juice over it.
6: Serve with mint sauce and onion rings.

Penne in arrabiata sauce

     Scrumptious treat for kids; with a bit of spices and appropriate amount of tanginess. Quite a simple dish ; yet with distinct flavors.
            Arrabiata sauce itself is supposed to be spicy but you can modify the recipe as per your taste.Some like it spicy, some creamy. When ready, preen it up with some oregano and chilli flakes; not to forget that cheesy layer.

Ingredients:

(Serves 3-4)
250 gms. Penne pasta
3 tbsp Oil
 4 onions(chopped)
4 Tomatoes(boiled and peeled)
2 tbsp olives
4 tbsp corn kernels
1/4 cup mozarella cheese(grated)
4 garlic cloves
1 tsp salt
1/2 tsp black pepper
1/2 tsp red chilli powder
1 tsp oregano
 DIRECTIONS:
1: Boil pasta as per instructions on the packet.
2: Heat oil in a skillet.
3: Add onions and garlic(chopped).
4: Cook it till it is translucent.
5: Add pureed tomatoes,redchilli and black pepper.
6: Add oregano and cook till it leaves oil.
7: Add boiled and drained pasta,olives and corn.
8:  Toss it a little and serve it with mozerella , chilli flakes and oregano on top.

Honey Chilli Baby corn and mushrooms

Vegetarian Chinese dishes are unmistakably as delicious as its non veg counterparts. I can vouch for it since I have seen many non vegetarians devouring it as fast as the non vegetarian version. It always strike a chord with both kids and adults alike. Dipped in batter; fried till golden brown(though i shallow fry them)and sauteed with colorful , bright peppers and spring onion's greens- everything about this indo chinese starter is just YUMMMMMM!!!!!!!!!!

Ingredients:
400 gms. Button mushrooms
250 gms. baby corn
5 spring onions
1/2 tsp. garlic(chopped)
1/2 tsp. ginger(chopped)
1/2 tsp. chopped green chillies
1/2 cup plain flour
1/2 cup cornflour
3/4 tsp. salt
1/4 tsp. red chilli powder
1/4 tsp. black pepper powder
3tbsp.Oil
2tsp. Soya sauce
2 tsp. chilli sauce
2 tsp. Vinegar
2 tbsp. cornstarch

Directions:
1.Make a thick batter of flour, cornflour and half of salt and pepper.
2.Dip mushrooms and baby corn in the batter and deep fry them.
3.In a wok, heat oil.
4:Add chopped spring onions.
5:Saute a little and add ginger, garlic and green chillies.
6:Add soya sauce, chilli sauce and vinegar and rest of salt and pepper.
7:Add fried mushrooms and baby corn and stir fry it.
8:Add cornstarch and stir it quickly.
9:Garnish with chopped spring onion greens.

Grilled chicken with pepper sauce


               Grilled to perfection,
               Resplendent at sight;
               Aromatic and succulent,
               With right blend of spices;
               Smothered with pepper sauce,
               As much as with love;
               Could you ask for more??

Ingredients:
(Serves 2)
2 Chicken breast (boneless)
1/4 tsp black peppercorns ( freshly ground)
1/2 tsp. Salt
2 cloves garlic( paste)
2 tbsp. Olive oil

For the sauce:
125 ml. Heavy cream
1 tbsp. Black peppercorns(crushed)
2 tsp. Worcestershire sauce
2 tbsp. Brandy

Directions:
1:Whisk Olive oil,salt, pepper,garlic in a bowl and add chicken breast.
2: Marinate for at least 2_3 hours.
3:Place on a hot grilling pan and flip after3-4 mins. Grill till brown and crisp from both sides.

For the sauce:
1:Heat cream over medium heat.Don't let it boil.
2:Add Worcestershire sauce , black peppercorns and brandy.
3:Simmer for 2-3 mins.and drizzle over grilled chicken.

Som Tam (green papaya salad)

   
               This green papaya salad,usually known as 'Som Tam' is so popular that there is hardly any country on the globe where you won't find it.
                 It is a beautiful and delicious amalgamation of flavors and colors. Tart flavor of raw papaya,sweetness of palm sugar and saltiness of soy or fish sauce make it all the more yummy and delightful; besides being nutritious.
                You can even play with the ingredients to have an edge over regular Som Tam.Try using raw or ripe mangoes and cucumber and get you own,distinct Salad.
     
                              Relish !!!!!

Ingredients:

1 Raw Papaya
4tbsp. Peanuts (toasted)
3tbsp. Palm sugar
2tbsp. Soy or fish sauce
Juice of 2 lemons
2 cloves garlic
1_2 red chilli
2 green beans(blanched and cut into 1" long sticks)
5-6 cherry tomatoes ( cut into halves)

Directions:

1:Peel and shred raw papaya.
2:With mortar and pestle , crush peanuts.
3:Smash red chillies and garlic lightly with the help oh mortar and pestle 
4:Heat palm sugar along with 3tbsp. Water .
5:Mix palm sugar syrup,soy and lemon juice.
6: Now mix all the ingredients together in bowl and toss it for a while .
7: Serve.

Fattoush


Ingredients:
(Serves 4-6)
2 Pita bread (toasted)
2 cucumbers (diced)
2 red onions (diced)
1 capsicum(diced)
1 yellow pepper(diced)
1 red pepper(diced)
Few cherry tomatoes (cut into halves)
Parsley(torn into pcs.)
Mint leaves(chopped)

For dressing:

3 tbsp.lemon juice
3 cloves garlic(crushed)
1/2 tsp. Freshly ground pepper
1/4 tsp. Sumac
Salt, to taste
3 tbsp. Olive oil

Directions:

1: Whisk all the ingredients of dressing.
2: Add toasted pita and other ingredients and toss.Serve.

Cottage cheese and pepper salad


Back with a salad recipe as promised.

Ingredients:

(Serves 4-5)
1/2 kg cottage cheese (cubed)
1 capsicum(cut into thin strips)
1 red pepper(cut into thin strips)
1 yellow pepper(cut into thin strips)
Few olives
 1/4 tsp salt
1/4 tsp Dijon mustard
1/4 tsp black pepper
Juice of 1 lemon
1tsp. Olive oil

Instructions:

1. In a bowl, whisk oil,lemon juice,mustard powder and salt. Crush black peppercorns and add to the dressing.
2:Add cottage cheese,peppers and olive and toss lightly.
3:Serve chilled.
